Selva, from Oaxaca with love

In 2019 we designed the Identity, the Bar, and the Menu of Selva, a Cocktail Bar in the earth of Oaxaca, the birthplace of Mezcal. One year later, Selva was the first Oaxaca Bar selected by Tales of the Cocktail as one of the Best New Bars in Latin America.

One night in Selva

When you visit Selva the first time you might think you are in London, New York, Buenos Aires. The mix of contemporary and vintage architecture will let you travel through space and time.

At first, you’ll be stunned by the wonderful 15-meter green wall painted by the local artist Raul Herrera “El manantial de los pájaros”.

Then you’ll have a seat and enjoy the touch of leather and velvet of vintage sofas and chairs. 

While slowly realizing where you’ve landed, you’ll start hearing sounds from the region with brass bands playing live.

As soon as you open the menu you will realize you are in the very center of Oaxaca and start a journey through its market and traditions : Mezcal, Pulque, Cacao, local Rhums.

You’ll order an “Ocotlan” cocktail served with cacao nibs to add a gourmet touch to the mix.

Everything in Selva is made to please all five senses and make you travel from your seat.

Selva Menú 2023

Selva Menu is a journey through a series of fictional cities, an imaginary geography where Mexican and International ingredients interact to create a flavourful Ecosystem.

The Cocktails are inspired by the work of world-traveler naturalist Alexander Von Humboldt (1769-1859), one of the first to perceive the World as an Interconnected Ecosystem instead of a group of States with opposed geopolitical interests.

During his explorations of Mexico and South America he was moved by the scientific curiosity to understand how flora and fauna coexist to create complex ecosystems and how Altitude plays a key role in the growth of plants and vegetation in general.

Humboldt introduced the term “Isotherms” and drew the first Temperature Map of the world, highlighting how places with similar latitude share the same climate and explaining why similar plants can grow in regions as far-apart as Central America and North Africa, South-East Asia and South America, …

In a time of climate deregulation, our menu is an homage to the legacy of a man who referred to Climate as the entry point to describe the diversity of the World.

 

Selva in a glass

As head bartender and beverage director, Alexandra wanted to create a Cocktails inspired by a dish served by Los Danzantes’ Restaurant. One of their best-sellers is a meal made of grilled cheese rolled in a big green Hoja Santa leaf, a Latin American plant with light aniseed notes. 

Amazed by its color and refreshing power, Alexandra had a pretty hard time preserving its bright color when mixing it with Mezcal. See for yourself, she designed an iconic cocktail served with a cheese skewer in reference to the meal.
